Tennessee T-Cakes Are Ultimate Southern Treat

Frances Barkley used to bake up batches of her delicious teacakes and give them as gifts to friends and family.
When people started asking if they could buy some extras, she recognized a business opportunity. Barkley started selling her teacakes 12 years ago, and the Nashville-based Tennessee T-Cakes was born.
“Tennessee T-Cakes are unique because they aren’t a cake, candy or a cookie – they’re a confection,” Barkley says. “Without being chocolate, it’s like biting into a gooey brownie.”
Today, Barkley and her helpers, twin son and daughter Russell and Jennifer, receive orders from all over the world via their Web site. The bite-size T-Cakes come in four flavors – Original, Key Lime, Luscious Lemon Lime and Chocolate Truffle.
And the company is creating quite a buzz outside its home state. In May 2006, Tennessee T-Cakes was featured in an “Oprah” segment on the best cakes in the country. The Food Network cable channel is also planning to spotlight Tennessee T-Cakes in a coming program.
Many people have tried to reproduce the coveted T-Cakes recipe, but Barkley says it will remain a secret forever.
“People guess ingredients that aren’t even in there, like ginger or bourbon,” she says. “But they’re actually made from simple ingredients – flour, butter, sugar, eggs and vanilla. It just has to be done the right way.”
