Ingredients

  • Red potatoes, scrubbed and diced, skin on
  • 1/2 cup mayonnaise
  • 1/2 cup fat-free Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/4 cup onion, chopped
  • 1 cup fresh herbs of choise
  • 2 scallions, sliced
  • 2 tablespoons capers
  • Pinch of salt

Instructions

  1. In a large pot, boil or steam potatoes until tender.
  2. Drain and spread in a single layer on a baking sheet to cool.
  3. In a large bowl, whisk together the mayonnaise, yogurt, mustard and pepper.
  4. Add cooled potatoes, onion, herbs, scallions, capers and salt to the bowl with the mayonnaise mixture and toss until everything is combined.
  5. Serve immediately or store in the refrigerator until ready to serve.
