Healthy Potato Salad (Recipe Video)
Try a healthier, lightened-up version of traditional potato salad with this easy recipe from Farm Bureau Health Plans.
Ingredients
- Red potatoes, scrubbed and diced, skin on
- 1/2 cup mayonnaise
- 1/2 cup fat-free Greek yogurt
- 2 teaspoons Dijon mustard
- 1/2 teaspoon black pepper
- 1/4 cup onion, chopped
- 1 cup fresh herbs of choise
- 2 scallions, sliced
- 2 tablespoons capers
- Pinch of salt
Instructions
- In a large pot, boil or steam potatoes until tender.
- Drain and spread in a single layer on a baking sheet to cool.
- In a large bowl, whisk together the mayonnaise, yogurt, mustard and pepper.
- Add cooled potatoes, onion, herbs, scallions, capers and salt to the bowl with the mayonnaise mixture and toss until everything is combined.
- Serve immediately or store in the refrigerator until ready to serve.
