Savory Biscuits Are Great for on the Go

You don’t often find a young mom with her own business to run in the same mix as a cook-from-scratch kind of gal.

That is, unless you go to Dyersburg in West Tennessee and track down Regina Gregson.

There you will find the owner of a gift shop, Especially for You, and the mother of 3-year-old Ben. You’ll also find a woman who loves to cook Country Ham and Cheese Biscuits, which is included in Country Classics II, published by the Tennessee Farm Bureau Women, now in its second printing.

The recipe was given to Gregson years ago by an older family friend whose name has been forgotten. But the recipe remains in her repertoire.

“I like breads with things in them, like the ham and cheese combination,” Gregson says. “I love the idea of having it all together. It’s delicious.”

She uses the biscuits paired with a salad for a light meal or for Christmas breakfasts and other family gatherings, since she has lots of family living close by, including her father, who farms for a living, and her mother, also handy in the kitchen.

“I’ve always cooked with my mom,” Gregson says. “She is a very good cook.”

And a generous one, since she shared a recipe that is also dear to Gregson’s heart, a broccoli salad that everyone loves, she says.

Gregson also uses the Country Classics cookbook as a go-to reference when she is searching for the perfect recipe.

“I probably use it, I’d say quarterly,” she says. “When I look for a recipe, I look to that first. It has good Southern recipes in it.”

While she is known for biscuits, broccoli, casseroles and other vegetables, Gregson acknowledges that she doesn’t have as much time to spend in the kitchen, as she’d like.

“I’m a young mother, and I own a business, so I’m an on-the-go kind of cook.”
