Black Walnut Cream Cake

Serves 12
Ingredients:
3 large eggs
2 cups sugar
2¼ cups self-rising flour
1 cup chopped black walnuts
1½ cups heavy cream
½ cup whole milk
2 teaspoons vanilla extract
Procedure:
Preheat oven to 350 degrees. Spray two 9-inch pans with nonstick spray and dust with flour. In large bowl, beat eggs until light and fluffy. Add sugar; beat well. In separate bowl, combine flour and nuts. In alternating increments, add flour mixture, milk and cream to egg mixture, beating after each addition. Add vanilla and beat well. Spread in pans.
Bake 25-30 minutes or until toothpick comes out clean. Cool for 10 minutes; remove from pan. Frost when cooled.
Cream Cheese Frosting
Combine one 8-ounce package of softened cream cheese and 1/2 cup softened butter. Beat until smooth. Beat in 3 cups of powdered sugar and 1 teaspoon of vanilla until smooth. Add sugar to obtain desired amount.

You can put it in a variety of cake pans. The recipe suggests 9-inch pans so that you can make a layered cake, with frosting between the layers.

I made this cake for the holidays. Everyone loved it and couldn’t wait for another occasion to have another piece. However, I made it in a long cake pan 13x? and cut the cake in half making to squares. I also used 2x the frosting because we like a lot of frosting.

I made this cake to take to a dinner at the church building. Glad I chose to eat a piece there instead of waiting for “left over” to take home...there wasn’t any cake left over to take home. I misplaced my recipe so was glad to find that tnhomeandfarm.com had a recipe section.

You are calling this a cake although you are putting it in 9” pie pans. Can I just use a cake pan? and are you putting the frosting between the layers? Thank you. Joe
