When Linda Davis and her husband, Gerald, sit down at the dinner table, the menu frequently includes her tasty Mediterranean Spinach Quiche.
“It’s an easy, fairly light meal,” Davis says. “My husband and I eat it quite often. It’s a good choice for the two of us – I often serve it with a fruit salad.”
Davis says she found the recipe several years ago and has added her own variations. The quiche is included in the popular Country Classics Volume II cookbook, published by the Tennessee Farm Bureau Women.
“The feta cheese in the recipe has a tang to it – it’s a favorite of ours,” Davis says. “You can add tomatoes, mushrooms or black olives. When tomatoes are in season, I sprinkle some over the top of the quiche.”
The Davis family lives on a 350-acre Gibson County farm near Rutherford that they purchased in 1969. Davis says their three children were raised on the farm and the couple now has 10 grandchildren. The Davises raised row crops and cattle, and now have goats and sheep. The family also has a farm equipment and repair business on the farm.
Davis has long been active with the Farm Bureau Women, serving on the state committee as well as the board of directors. She says she uses the Farm Bureau recipes often and has “quite a collection” of cookbooks.
Davis says she often cooks a big meal at noontime. She is a strong supporter of growing crops to feed our families.
“It’s very important to raise our food,” Davis says.
