Easy Pleasers

If an occasion is on the calendar, you can bet Donna Parker will be preparing her delicious Chili Cheese Snacks.
Parker, who lived with her late husband, Lowell, on a 100-acre Campbell County farm, now resides in an apartment. But she’s still an avid cook.
“My family has always enjoyed this recipe,” Parker says. “I’ve fixed it for Farm Bureau dinners, church functions and other occasions. You name it – I’ve used it. I like it because it’s quick and easy.”
The recipe is in the Country Classics Volume II cookbook, published by the Tennessee Farm Bureau Women and now in its second printing.
Parker says she doesn’t remember exactly where she got the recipe, but says it was at least 20 years ago, and it’s been a hit with hungry snackers from the start.
Back then, they were a true farm family, raising cattle, tobacco and hay. Parker says she and her husband were active in the Farm Bureau and 4-H. Today, their daughter, Robin, still lives on the family farm.
“I still enjoy cooking, but I don’t cook like I once did. I live on my own in an apartment complex, but we have a lot of dinners, and I am always doing for those,” Parker says.
Now, Parker is showing her 5-year-old grandson, Tommy, the ropes in the kitchen.
“He loves to cook with me,” Parker says. “He likes brownies and chocolate chip cookies, and I’ve given him a cookbook for children. He thinks it’s delightful.
He enjoys putting things together.”
And little Tommy is a pretty lucky guy. Parker says she prepares treats for Tommy and his school classmates once a month.
